1 pound pla ra ram or pla ra gradee
3 tablespoons liquid from pickled garlic
2 heads pickled garlic, pounded
4 tablespoons palm sugar
3 tablespoons taramind juice
2 teaspoons gapee (shrimp paste)

Boil pla ra in a pot over medium heat sufficient for the boil. Strain the liquid and add the liquid back to the pot over medium heat until it is reduced to about 2 cups. Add the pickled garlic juice, pickled garlic, palm sugar, and tamarind juice. Dissolve the shrimp paste in the liquid and decrease the heat to a soft boil until it has a concentrated taste. Shut off fire and let the mixture cool. It will store a week in a covered container in a cool cabinet.
