1/2 pound Thai king shrimp
20 fresh prik kee noo
2 stalks lemon grass
3 red shallots
20 peppermint leaves
1 tablespoon kaffir lime leave, trimmed
1 tablespoon lime juice
1 tablespoon good nam pla

Clean shrimp. Remove shell and cut the back to remove the "vein". Blanche in boiling water until just cooked. Thinly slice prik kee noo, lemon grass and shallots. Clean mint leaves. Mix shrimp with lime juice, nam pla, lime leaves, lemon grass, chiles and shallots. Season to taste. Top with peppermint leaves.
